Looking for a wine that’s a perfect pairing for pancakes?—

There’s something outrageous about the texture of a pancake, somewhere between chomping on a buttock and snuggling in a duvet. Then there are the fillings: a vortex of lust. Happily, where wine is concerned it’s easy to navigate – ignore the pancake and pair to the stuff in the middle.

Rule one: serve all these wines chilled to keep their flavours in focus.

An all-rounder couldn’t be simpler or better value – Asti Spumante from Italy. Tesco has one for £5.50. Aldi’s is good for £4.99 and with lower levels of alcohol it’s a respectable sip, served chilled. Sweet, frothy fun: what’s not to like?

If you’re serving up the lemon and sugar classic, a sweet wine balanced with zestiness is the way to go, such as a German Beerenauslese Riesling. Or for something unique, Inniskillin Sparkling Ice Wine from Canada is luscious for £45.95 (37.5cl, 9.5%) from slurp.co.uk.

Botrytis wines are also thrilling, with their sweet zesty character, and of course you could splash out on Sauternes. But truthfully I’d turn to Australia – a great example is Hermits Hill Botrytis Semillon in M&S for £9 (37.5cl, 12%).

Orange fillings turn the direction to Tokaji from Hungary or a Muscat from Greece – Waitrose has Anthemis Muscat of Samos (50cl, 15%) for £9.99, which is immense. But I’ve found a superb bargain of a sweet muscat in my recommendations below for around a fiver.

For strawberry, blueberry and raspberry fillings, how about an off-dry pink Champagne? Taittinger’s Nocturne Rosé NV City Lights Edition (12.5%) is £70 from Harrods.

But for my pancake moment, I’m uncorking that old favourite of Napoleon Bonaparte – Klein Constantia’s Vin de Constance.  If the universe has a sweet centre, it’s in one of these bottles. Let’s find it together.

WITH LEMON & SUGAR: Tesco Finest Dessert Semillon 2011 (37.5cl, 10.5%) £6. Charged with sweet zing, this electrifying sticky treat is superb served chilled.

WITH ORANGE:  Winemakers Selection Muscat St Jean de Minervois (37.5cl, 15%) Sainsbury’s £5. Wine’s answer to orange barley sugars, this mellow marvel is superbly sweet.

BEST ALL-ROUNDER: Asti Spumante Marks and Spencer (7%).Buzzing bubbly that’s floral, fragrant and divinely sweet. Point it at your pancakes!

FIND THE SWEET SPOT: Klein Constantia, Vin de Constance 2013 (50cl, 13.5%) The Wine Society £45. The perfect pancake wine, this world class sweet wine is among the best bottles on the planet. Treat yourself.

WINE OF THE WEEK

Tabali Talinay Chardonnay 2014 (13.5%) £15.99 Virgin Wines. Move over Burgundy, this is as good as Chardonnay gets. A frozen peach shattered across a rock hard salty desert.
